Although I have not considerably expanded my palate with seafood, I shall always remember my first bite of Chef Giuseppe’s Snapper Crudo at last year’s Celebrity Chef Tour in Chicago.  What a delicious way to learn that crudo means “raw” in Italian; Dashi is what forms the base for miso soup, and Stinging Nettle is an edible weed.
