Milne, you know it will be a classic treasure to keep in your kitchen.  Raghavan Iyer, an accomplished and award winning cookbook author celebrates the simplicity of this complex carbohydrate, aka the potato in his latest cookbook Smashed Mashed Boiled and Baked  According to Raghavan Iyer, there are over 5,000 varieties of potatoes around the world, and the potato is the fourth largest crop in the world.

Raghavan Iyer is truly one of the most inspiring people you will ever meet.  His culinary curiosity and creativity bring ingredients to a crescendo in the kitchen. I am so truly grateful for his friendship and mentorship.  Here are three things you should know about potatoes:

  1. Potatoes are extremely nutritious.  It’s an essential source of complex carbohydrates and a great source of vegetable protein. In addition, the potato has high amounts of potassium, magnesium and vitamin B6. Some of the darker potato skins have antioxidants.
  2. Keep potatoes in cool, dark places such as a pantry, basement or garage.  Raghavan suggests storing potatoes the same way as spices.
  3. Be fearless in pairing potatoes with a world of spice blends and ingredients, such as chickpea flour, dukkha, buttermilk, Greek yogurt, and pomegranate seeds.
