Katie's Cookies

Do you need a last minute idea for a great Valentine’s Day gift from the heart?  Bake a batch of Katie’s Cookies.  Created by my friend, Lynn Gentile and named for my youngest daughter, Katie, these cookies are delicious! Here’s the recipe along with some photos.

Ingredients:

3/4 cup brown sugar
3/4 cup butter
2/3 cup peanut butter (Fresh ground honey roast is fabulous choice)
1 tsp vanilla
1 cup oatmeal flour
1 cup White Lilly
1 cup peanuts
1 cup chocolate chips
pinch of salt (I’ve started using pink Himalayan salt)

 

For a special Valentine's Day mis-en-place, the ingredients are displayed in German crystal dessert dishes that my late dad used for serving raspberries topped with freshly whipped cream.

Mix everything together and then place on cookie sheet and bake for 10-12 minutes at 375 degrees.
