Happy National Dessert Month! Let’s celebrate the deliciousness of desserts with Dorie Greenspan, the Queen of Sweetness. Her latest cookbook Dorie’s Cookies will inspire you to make batches of cookies you have never even tried. What about Meringue Snowballs and World Peace Cookies?
Dorie shares tips from her kitchen and stories from her heart. Here are three easy things to do to make your cookies legendary:
- Use an oven thermometer. Each oven has its own personality and temperature temperament. An oven thermometer will provide extra accuracy. Dorie encourages us to determine hotspots within our ovens by placing shredded coconut on a baking sheet.
2. Line the baking sheets. By lining our baking sheets with parchment paper or silicone baking mats, we will avoid sticking and burning. And, the cookies will bake more evenly.
3.) Add the flour all at once Turn the mixer off, add the flour all at once and pulse the mixer on and off until the risk of flying flour has passed. As Dorie says, “There might be a flour shower” but it will help us avoid overworking the dough. There are a few times the all-at-once method won’t work, but Dorie discusses that in her book.
