Mindy Segal is a successful entrepreneur, restaurateur, and an award winning pastry chef with a huge heart for charity.  (In 2012, she won a James Beard Award for Outstanding Pastry Chef). As a student at University of Wisconsin, she skipped school to cook for everyone.  It was then that she realized her real passion in life was to be a chef.  While heading to class one day, she saw a bus that said “Chicago,” got on it and headed home.  She told her parents that she wanted to drop out of school and become a professional chef.  She enrolled at Kendall College, and Chicago would never be the same.  Her passion and commitment to perfecting and evolving her craft in an organic way are key ingredients to the almost 14 year success of her restaurant HotChocolate.

Recently, Mindy Segal joined her dear friend Chef Jaime Laurita and me in the Viking Showroom to share highlights from her culinary journey along, favorite recipes from her cookbook Cookie Love and her tips for the home chef:

    1. Completely read a recipe;
    2. Use really good ingredients; and
    3. Follow the professional advice provided in a cookbook
