Nathalie Dupree: The Queen of Southern Cuisine

Nathalie Dupree is The Queen of Southern Cuisine.  This award winning chef, cookbook author, restaurateur, television and radio host has done it all.  During the Les Dames d’Escoffier conference in Washington, DC, Nathalie shared her thoughts, tips and recipes.  But first Nathalie shares her Pork Chop Theory and the importance of women helping each other.

Nathalie Dupree shares three great tips for cooking and for life:

  1. Make vegetables the aliment of your meal and use meat as a condiment.  “Southern cooking is vegetable based. Our cooking is simple and honest.”
  2. Always make your grits in advance.  One of her favorite simple meals is grits with crumbled bacon and chopped cherry tomatoes on top.
  3. Never compromise your perceived value.   Nathalie shares the story of a necklace and her advice from Julia Child.
