National Cheese Day is on June 4th; however everyday is National Cheese Day in my kitchen.  There’s nothing yummier than the flavor of cheese.  As part of my culinary journey, I am expanding my palate and including ingredients and spices from around the world on my plate.  What a delightful treat to recently interview culinary star and Food Network Judge, Chef Kristin Sollenne and learn about the cheeses of Europe.  Chef Kristin has been part of the Beat Bobby Flay series for six seasons.

With a background in nutrition, Chef Kristin’s culinary approach is “making healthy cool” and she believes in the adage, “a little goes a long way.”  And the same goes for cheese. It’s about balance.  Chef Kristin explains that the cheeses of Europe have a complex flavor profile and are truly forms of art, especially when one understands the aging process and knows the regions where the cheeses are from and how this all impacts the flavor.  One of her favorite cheeses is Bleu d’Auvergne, aka Blue Cheese.  she enjoys making a “one-bite-wonder” with this Chef’s Bite, Bacon Wrapped Dates stuffed with Bleu d’Auvergne.
