Indian Cuisine with Raghavan Iyer

Are you ready to start the new year with healthy eating? If so, Indian cuisine might be a good choice for you.  Raghavan Iyer shares delicious insight into creating exotic dishes of India in your own home.  This emmy award winning host and culinary artist uses ten ingredients or less in each recipe featured in his cookbook Indian Cooking Unfolded.  You will discover the tastes of bitter melon (a vegetable with a tail) and dhal, a legume curry. As Raghavan says, “The epitome of comfort food is a bowl of dhal and rice.”

Raghavan and I first met at the International Association of Culinary Professionals (IACP) conference in Chicago in 2014.  His genuine graciousness and enthusiasm for Indian cuisine will inspire you to bring the flavors of India into your own kitchen.   “The northern region features more aromatic spices such as cinnamon, coriander, cumin, peppercorns and cinnamon,” he explains.  According to Raghavan, the southern area is more assertive in its spices with a higher heat level such as chiles, and coconut is an important ingredient in that region, too.  “The west reflects the sophistication of legumes and spices, and the eastern region doesn’t clutter the palate,” Raghavan says.

Enjoy the health benefits of Indian cuisine during the new year.  Savor the day!
