Raghavan and I first met at the International Association of Culinary Professionals (IACP) conference in Chicago in 2014. His genuine graciousness and enthusiasm for Indian cuisine will inspire you to bring the flavors of India into your own kitchen. “The northern region features more aromatic spices such as cinnamon, coriander, cumin, peppercorns and cinnamon,” he explains. According to Raghavan, the southern area is more assertive in its spices with a higher heat level such as chiles, and coconut is an important ingredient in that region, too. “The west reflects the sophistication of legumes and spices, and the eastern region doesn’t clutter the palate,” Raghavan says.
